BACALAO & RICE SOUP
(Sopa de Bacalao)

TIP: you can substitute long grain white rice with Orzo
1/2 lb of dried Cod Fish (Bacalao)
½ cup of white long grain rice
1 tablespoon of olive oil
3 stalks of celery
1 onion cut into 4 pieces
½ teaspoon of freshly ground black pepper
3 cloves of garlic
Salt (optional)
6 cups of water
1 cup of potatoes cut into small pieces
2 tablespoon of vinegar
A small bunch of parsley
INSTRUCTIONS
Cut bacalao in small pieces. Rinse well to remove excessive salt
In a separate pot boil potatoes until tender
In a large soup pot, add 6 cups of water and the first 7 ingredients
When the rice is soft, add the boiled potatoes and the vinegar.
When serving, garnish with chopped parsley.
