8 cups of milk
2 eggs, lightly beaten
3 cups of sugar
3 teaspoon of limejuice, freshly squeezed
1 teaspoon of vanilla
¼ teaspoon of salt
1 stick of cinnamon
INSTRUCTIONS
Mix the milk, sugar and salt. Stir until sugar is dissolved.
Add the eggs and stir until blended. Using a colander, sift the mixture into a non-stick pot
Place on medium to high heat and bring to a boil. Stir constantly until it thickens
Add limejuice and stir once. Once it becomes bubbly (similar to ricotta cheese) turn heat to low
When the syrup and the milk separates, remove from heat and let cool
Serve cool
