Chili Beans
Prep Time: 25 minutes
Servings: 5-6
Cooking Time: 10 hours (slow cooker)
1 lb of boneless beef top round steak
1 tablespoon of oil
Meat Seasoning
2 cans (14oz) diced tomatoes
½ carton (16oz) beef broth
1 cup of onion, chopped
2 jalapeno peppers, finely chopped
3 garlic cloves, minced
2 tsp of chili powder
1 tablespoon of sugar
½ tsp of oregano
½ tsp of ground cumin
¼ tsp of freshly ground pepper
Bean seasoning
1 (15oz) can of pinto beans, rinsed and drained
1 (15oz) can of small red kidney beans,
½ tsp of shredded lime zest
1 tablespoon of limejuice
2 garlic cloves, minced
1 tablespoon of olive
INSTRUCTIONS
Meat Preparation
Trim fat from meat & cut into chunks
In a large skillet, heat oil and brown the meat. Drain fat
Pour meat and the seasoning in slow cooker on low heat for 10-12 hrs or on high for 5-6 hrs
Beans Preparation
In a bowl, combine beans, lime Zest & juice, olive oil, and garlic. Blend well.
Serve with chili sauce, a dollop of sour cream and garnish with parsley
