Eggplant Fritters
Prep Time: 10 minutes
Cooking Time: 5 minutes each
Servings: 10-15 1/2 slices
1 eggplant
2 eggs
1/4 cup of flour
2 tablespoons of parmesan cheese
1 teaspoon of salt
1/4 teaspoon of freshly ground black pepper
Oil
Instructions
Peel the eegplant and cut it in 1/2" slices
Place the slices in a bowl and cover with water
Add 1 tablespoon of salt and 1/2 cup of vinager
Let it rest for 10 minutes
Batter
Using a deep skillet or pot, heat oil on medium heat
Wisk the eggs and add flour, pepper, cheese and salt. Mix well
Dredge eggplants one slice at a time and fry until golden (2 1/2 minutes each side)
Serve with marinara sauce, over salad, rice or pita bread
