Stuffed Fish

Cooking Time: 30 minutes
4 filets of grouper fish (mero)
The juice of a freshly squeezed lime
6 mushrooms, washed and chopped
1 cup of fine bread crumbs
4 tablespoon of Parmesan cheese
¼ cup of chopped parsley
½ tablespoon of kosher salt
½ cup of white wine
1 tablespoon of flour
1 bar of butter
1 cup of fish stock
INSTRUCTIONS
Sprinkle filets with salt, pepper and limejuice and marinate for 15 minutes
In a mixing bowl, add mushrooms, breadcrumbs, cheese, parsley, butter and salt.
Mix well
Pour a spoonful of this mixture (spread well) on each filet and roll. Secure with a string or toothpick
Heat oven to 375 degrees
Place filets in baking dish. Add the wine and fish stock and bake for 15 minutes each side.
Remove fillets from baking dish and place them in a serving plate. Do not discard the juices
In a skillet, melt butter and remove from heat
Add the flour and stir constantly until dissolved
Add the juices from the baked filets in small increments until sauce thickens
Pour sauce over the filets and garnish with lime slices and parsley
Serve with pasta
