Yucca con Mojito

3 lbs of yucca
1 head of garlic
2-3 limes
2 teaspoon of salt
1 medium onion
1 cup of olive oil
Water
Scallions, parsley or cilantro, finely chopped
INSTRUCTIONS
TIP: If yucca is cold, place them in a bowl with tap hot water for a few minutes. Peels comes off easier
TIP: Yucca is tender when a fork goes through. If you like it very tender, the fork will part it as you insert it
Remove bark from yucca with a knife. Cut in half and remove the thick fiber found in the center of the yucca
Rinse well
In deep pot, add sufficient water to cover the yucca and add salt
Cook until tender or al dente if you prefer
Drain and set aside in a mixing bowl
In a skillet, heat oil and add the onion and garlic and cook until translucent.
Remove from heat and pour over the yucca.
Squeeze the limejuice on top and serve
Garnish with scallions, crumbled bacon, parsley or cilantro or a combination
